recipe : greek chicken with olives and cauliflower


The first thing I want to do when I'm done with grad school plus a year after working is take my parents on a vacation. I express this to my parents almost on a daily basis. So I ask my mom where she wants to go and every single time she says Greece. No reason. Just want to go to Greece. So one evening, I thought I'd take her to Greece.

My dad wasn't home and it was just my mom and I for dinner. We took a little culinary tour of Greece without him knowing [there were no leftovers to share]. 

 

If you're wondering how I made the pilaf, I just bought one of those boxed pilafs from Whole Foods. To make it more interesting, add some toasted pine nuts! And by the way, my mom is not a fan of feta and she suggests that you do sprinkle it on top. It adds some great dense, creamy texture.
