recipe : "grilled" mediterranean carrots

Gosh, I hate carrots. I'm not fan of them at all actually. I've tried carrot juice, dipping carrots in a french onion vegetable dip, everything. I've never really had the carrot variety though until recently. I had a friend visit who actually grows her own root vegetables and herbs. So when she came over with carrots from her garden, as much as I was excited for garden fresh vegetables I was also disappointed with the site of carrots. But we played around in the kitchen and came up with these suckers, and they're delicious. You can probably actually char them on a grill, but we decided to make them on a skillet inside, which is why I added quotation marks on the grilled. If you do end up charring them on a grill, please let me know so I can add any suggested notes to the post!

  1. YUM! Sounds delicious! Thanks for sharing the recipe. :-) I love carrots. I actually used to eat them for dessert as a kid -- for some reason, I found them so sweet and satisfying!

  2. I had really bad eyes growing up (and still do) so I would inhale carrots thinking it'd make my eyesight better. Alas, it didn't–but now I love them! Can't wait to try this out!

  3. This is such funny timing - yesterday I finally got around to chopping up the carrots I've had for a week. They're my fave. I love them every which way, and I'm sure I'll love them this way too. Thanks for the recipe!
