I've found it difficult to find time to make something fulfilling for lunch in the midst of lectures, seminars and reading. I am a bit sick of wraps and sandwiches. Leafy green salads are just not for me. I got exotic and went with rye crackers and smoked salmon for lunch, but even that is getting old. Really old. To mix things up a bit I thought I would hit the lentils and grains. At first, I failed. I can't swallow lentils. I think it's just the fact that I grew up on them and now I find them a bit distasteful. Can I use that word to describe my utter hate for them?
Then I was introduced to wheat berries here. This is when I knew grains were a good option for lunch. This, my friends, is my favorite rendition of the wheat berry salad.
