You know when most people study they claim they fail to eat well. No fruits or vegetables and instead bowls and bowls of cereal and lots and lots of chocolate. Though I participate in the chocolate consumption amidst deadlines or crunch time, I tend to eat well. Very well.
Right before handing in dissertations I made my friends and I a Mexican dinner. Guacamole, enchiladas, mexican rice, homemade salsa. It really was something I was craving and a treat for all of them as their recent meals were coming from refrigerated boxes. I find leftovers, which there was very little of, unappealing for some reason. Much like my outfits, I seek something different and unique every single day. It can be rather exhausting. And so, with the leftovers, I came up with this recipe.
Simple, spiced and hits the spot.
