Probably because it was always the same carrot cake at Indian birthday parties and I seemed to correlate carrots with healthy foods and never gave it a go per se. It was not until my move to the UK that I started to enjoy the sweeter side of the culinary world. Biscuits, tarts and cakes felt naturally sweetened and incorporated unique blends of creams and flavors that made for more exciting cake adventures of course. And since this entire birthday series is an ode to those cafe frequenting, tea-sipping and cake-indulging days, I thought I would bake a cake that fits the occasion.
