I never had much of a sweet tooth in my youth. After school, I would crave savory based snacks. I distinctly remember, and so does my mother, setting two plates in front of me at a birthday party. One with brownies and the other with nachos. And I indulged on the nachos keeping the brownies away. It’s not that I didn’t enjoy sweets, I just didn’t have a preference for them. This lasted for much into my adolescence until I moved to St. Andrews…I guess it was the fact that sweets in America was a bit too sweet. I always thought the glazes and sugary components was too much for me to handle and negated the actual flavors of sweet indulgences. Living in the UK I came to realize that the focus was entirely on the fruit or other sweet component. Sugar was a mere additive to bring flavors together. It truly felt like an art. And so far a few afternoons spent baking and evening coffee and cake trips, it was time I started to let myself indulge in what I’ve missed these several years.

So a pastry for you, light on the sweetness and just perfectly blended with floral and citrus accents.
