Sunday’s are always a bit strange. I prefer to wake up early so I can get ready for the week and as the day comes to an end I am tired enough to get to bed at a timely manner and start the week early Monday morning. Though I prefer to spend Sunday’s relaxing–so it’s a bit of a paradox. As of recently, I decided to emancipate from my list of to-dos and steer in a different direction. I decided to make brunch and have a few friends over. A very casual affair actually. Spinach is in abundance this time of the year and with a recent evening perusing through old travel photos, I thought a Tunisian shakshuka was to be made. And dare I tell you, that it was such a beautiful experience…
