Caprese salad is a must at my family’s home. It’s a salad we were introduced to first in Washington, DC back when I was in elementary school. My dad had made a reservation at a lovely Italian restaurant four weeks prior to our visit to the capital. We fell in love. And when I started dabbling a bit into cooking, salads were my thing so I would make the caprese quite often.

But of course, like any Indian household, we like to change things up a bit to fit our tasting. We love our basil, trust me, but we wanted spice. And a basil pesto just couldn’t bring out the “thikhaas” {or spice in Gujarati} in the pesto when we added a green chili. So I opted for a bit of lemon juice and substituted the basil for spinach. So I guess this is more of the Indian touch on the Italian caprese salad.
