This time of year, I find baking very much exciting. I’m not sure if I shared this with you all, but I absolutely despise baking. I find it rather difficult that I must measure all the ingredients and the process is a bit more stressful than stress relieving. But of course the holiday season calls for baked goods and sweet treats.

I wanted to try my hand at eggless cupcakes. After reading articles about cupcake variations, I was curious to learn a bit about the role of baking powder and baking soda. How much do they influence a cupcake and the sweet, baked variety. Though, I’m not going to bore you with the details, but I’m slightly {too} excited to share with you this very first eggless cupcakes and they’re sweet, soft and moist!
