When January hit, and the holidays are well passed us, my feelings are quite sporadic and divergent. On the one hand, I feel obligated to rejuvenate. Whilst indulging the holiday sweet treat and baked goods, I am not at all cognizant of what I will be feeling come January. Then there’s the post-holiday melancholia, where I want to hold onto every moment and memory. I hold onto that last mince pie, or choose to snack on the final candy cane, or treat myself to one more hot chocolate.
So to marry the two feelings, something that is wholesome and fresh as well as comforting is something I strive for in the kitchen. One of my favorite vegetables during the winter is the aubergine. It is full and hearty, packing nutrients, and the juxtaposition of the pearl couscous with sundries tomato olive oil gives that comforting feel that is utter perfection.
