Tofu Akuri & Spiced Grapefruit Punch

It was a few years ago when I was fairly new to London and especially London’s brunch scenes. A new {then} friend asked to meet for breakfast/brunch at a new {then} joint that was Dishoom. If you don’t know, but Dishoom is basically shaping heritage in the new-gen Indian cuisine out here. With a menu inspired by Irani/Parsi cafes of Bombay, the restaurant celebrates the culinary offerings of my favorite vibrant city.

With that said, I grew up absolutely loving a typical Irani/Parsi breakfast. My early mornings before conditioning for track and field always included 2 scrambled eggs that embraced the aromatics of a few good spices that makes up Akuri. Topped off with fresh grapefruit juice that we grew so generously in the garden, this meal takes me back to my earliest childhood breakfast memories and that first London brunch date.

Re-imaging this meal after a night out/long weekend party hopping, this is what I went after. And as an attempt to incorporating more vegetarian options into my daily grind, I went for making the egg dish as a vegetarian option by choosing Tofoo’s delicious tofu for the scramble!

Tofu Akuri {Parsi-style scrambled eggs}

Recipe
ingredients
  • 1 ToFoo Naked {225g firm tofu}, crumbled
  • 1 tbs ghee
  • 1 shallot, chopped
  • 2 tbs grated garlic and ginger
  • 1 red bell pepper, chopped
  • 2 large mushrooms, chopped
  • 1 green chili, shopped
  • 1/2 tsp turmeric
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • salt to taste

method

In a frying pan, heat the ghee and add the shallot, garlic and ginger. Add the bell pepper, mushrooms, green chili and salt. Stir for a minute and then add in the dry spices. Saute for about 5 minutes.

Stir in the tofu and continue to saute until cooked through. Garnish with fresh coriander an spring onion.

Spiced Grapefruit Punch

Recipe
ingredients
  • 2 shots of vodka
  • 1 jalapeño pepper, halved
  • 2 grapefruits, juiced
  • 1 orange, juiced
  • tonic water to top

method

In a mixing glass, muddle the vodka and jalapeños and let it sit for at least 30 minutes. In a salt-rimmed glass, add the infused vodka (peppers removed), top off with the grapefruit-orange juice and the tonic. Garnish with a sliced jalapeño or grapefruit slice!
